Ingredients:

  • 500g apples (or pears)

  • Sprinkling of lemon juice

  • 4 bread rolls (can be slightly stale)

  • ½ litre of milk

  • 200g cream

  • 3 eggs, separated

  • 80g sugar

  • Cornflour

  • A pinch of salt

  • Cinnamon

  • 1 sachet vanilla sugar

  • Icing sugar

Cut the peeled apples and bread rolls into slices. Sprinkle the apples with a little lemon juice. Whisk together the milk, cream, egg yolks, sugar, cornflour, salt, vanilla sugar and cinnamon. Whisk the egg whites until peaks form and then fold into the mixture. Arrange the bread and apples in alternate layers in a baking dish (the final layer should be bread), pouring a little of the egg/milk mixture over each layer. Bake in the oven for approx. half an hour at 200°C. Dust with icing sugar.

Tip: It’s common in Swabia to add plump raisins and flaked almonds to this delicious pudding, which is best served with fresh cream and vanilla sauce.
